Ingredients
- 2 tablespoons low sodium soy sauce
- 2 tablespoons rice/apple cider vinager
- 1/2 teaspoon garlic flakes or chopped garlic
- 1/2 teaspoon chili powder
- 2 cups chickpeas
- 1 medium cucumber chopped
- 1 bell pepper seeded and chopped
- 1 cup corn
- Lettuce Leaves or Cabbage (optional)
- Rice (optional)
Directions
- Combine the hoisin sauce, soy sauce, and garlic-chili paste in a small glass jar with a tight-fitting lid or in a small bowl. Shake or stir until they are mixed together. Set this aside for now.
- Gather the remaining salad ingredients in a large serving bowl. When you're ready to serve, drizzle the dressing over the salad and gently toss to mix.
